Squash you say???

I asked the lady who runs the little farmstand where I buy my fresh veggies, "what is asparagus squash?"...she told me that it was the most delicious little squash you'd ever want to eat!! Course, the word squash and I'm instantly hooked...I mean, who doesn't love squash?? I probably consume 2 to 3 squash items a week...either as my lunch or dinner entre...so, when I stopped into the farmstand this morning to pick up a fresh supply of tomatoes and spied these little green buttons of goodness on the counter, I knew immediately what lunch would be for me!! I asked her how to prepare them and what she told me to do is exactly what I do with my zucchini and crookneck summer squash...ah...life is good! I came home and this is what followed:










Yes, my vegetarian self LOVED this lunch...perfect!!! Fresh asparagus squash and a big 'ol homegrown tomato, a few Wheat Thin crackers (my all time favorites), washed down with a big glass of ice tea..ahhhh! and, and....I have enough of these little morsels of deliciousness left for tomorrow!!! SCORE!!!

After indulging in my yummy lunch today, I tried out a new muffin recipe for the cafe...can I just say that my house smelled wonderful...totally consumed with the aroma of apples, spices and sugar...delicious! Mandi could hardly wait to sample the goods and so after they came out of the oven and cooled a smidge, we dug in! Yep, these are a keeper....they will be the next muffins to make their way to the trays at the cafe next week! Just take a peek at these goodies....vegan of course!!



Mandi is already looking forward to having one for her breakfast tomorrow morning! I actually think a nice chai tea and muffin just might be what my breakfast will look like as well!

Speaking of tomorrow, the girl and I are headed out to the apple orchard...need to get me some fresh apples as I want to make some apple butter! I love apple butter!! After said apple butter making, I see some quilting in my future. I still need to bind my last quilt, have a bunch of fabrics just waiting to be sewn up into fun stuff!! Today I worked on my scarf, knitted on it as the muffins baked, listened to some good tunes and enjoyed a wonderful fall afternoon.

Alright, that's about it for me, off to have myself a cup of tea and watch a movie...I feel horror is in order...might just throw in my copy of Halloween..I mean...'tis the season!

Ok so I stopped by earlier and didn't comment. I was thinking how inspiring this post really was--however I was eating potatoe chips at the time!!!--you know a little guilt trip. Sometimes it seems like I eat chips for breakfast--hehe. I'm a huge salt fan. Anyway these are goreous pictures. The veggies look so tasty!!

I too love squash..that is a variety I haven't tried yet though..I will have to get me some at the farmers market this week!!

Also those muffins look great...someday you'll have to bake for me!!!

I am so bad. I think I only know Acorn Squash. It isnt bad - but my mom backed it to death so the *meat* of it was nice and squishy. I didnt even know different squashes(or squashie?lol) existed! Your lunch looks really good - makes me want to go vegi now! Seriously I love wheat thins. The muffin looks NUMMY. And I am so glad you are quilting more! Hazzah! Now I know who to go to for tips and tricks! I too want to watch a horror movie now - The orphanage is one I have been eyeing at - but had to settle for Hannah Montanna's movie instead. WHich suprisingly was GOOD. lol. Gosh Cricket. Now I want to make pumbkin bread. Is there a way to convert a regular recipe into a vegi receipe? HUGS! Nan

WOW~ I never heard of this kind of squash- but you know i have been on a sqaush kick lately too... so Might have to check out my co-op for a new kind of squash this weekend...
